Beauty – We have a choice to see beauty and opportunity or see problems and obstacles. There were waves in southern California last week, and I was up every morning before the sunrise. I was reminded how good it feels to experience the beauty of the sunrise.
Sardines– Sardines are good for you but they taste like a sweaty eyebrow. I like buying them in the can, smoked with olive oil. Then I mix them with canned tuna, canned salmon, chopped celery, chopped onion, lemon, dill, salt, pepper, sunflower seeds, and tomatoes (or try substituting dried cranberries or golden raisins for a little sweetness). Mix all of that with as much organic mayo as you like, and serve it plain, on toast, or stuffed in a large tomato. I can’t taste the sardines, and I have a super healthy meal.
